This vintage stovetop waffle iron is thought to have been made by A.G. Patton. While the piece lacks a definitive name, the interior markings and the prominent numbers on the pan’s bottom point to the maker’s style. Regardless, a well-oiled antique like this one is still in its prime for turning out batches of crisp waffles. Just give it a good coating of cooking spray and make sure it’s nice and hot before adding the batter.

Spiced Malted Waffles
Makes about 10
Ingredients
- 2 cups all-purpose flour
- 3 tablespoons malted milk powder
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground nutmeg
- 1½ cups whole milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted and cooled slightly
Instructions
- Preheat oven to 200°. Spray a cast-iron waffle iron with cooking spray. Preheat waffle iron over medium heat for at least 15 minutes.
- In a large bowl, whisk together flour, milk powder, sugar, baking powder, salt, cinnamon, ginger, and nutmeg. In a small bowl, whisk together whole milk, eggs, and melted butter. Stir milk mixture into flour mixture just until dry ingredients are moistened. Let batter stand for 5 minutes.
- Spoon ½ cup batter into preheated waffle iron, lightly spreading batter. Close iron and immediately turn pan. Cook until golden brown, about 2 minutes. Spray waffle iron with cooking spray between batches. Keep cooked waffles warm in oven while cooking remaining batter. Serve immediately with desired toppings.
