Triple Berry Cobbler

Using a vanilla bean adds a rich, sweet flavor to our Triple Berry Cobbler, but you can substitute a teaspoon of vanilla extract.

Triple Berry Cobbler
 
Makes about 8 servings
Ingredients
  • 1 cup plus 1 tablespoon water, divided
  • 1 (6-inch) vanilla bean, split lengthwise, seeds scraped and reserved
  • ½ cup granulated sugar
  • 3 tablespoons cornstarch
  • ¼ teaspoon ground cinnamon
  • 3 cups fresh blueberries
  • 3 cups fresh raspberries
  • 2 cups quartered fresh strawberries
  • Cobbler Dough (recipe follows)
  • 1 egg yolk
  • 1 tablespoon coarse sugar
Instructions
  1. In the work bowl of a food processor, place flour, cornmeal, sugar, baking powder, salt, and cinnamon; pulse until combined. Add cold butter, and pulse until mixture is crumbly. With processor running, add cream, and process until dough pulls away from sides of bowl. Remove dough from processor; bring dough together with hands.
  2. For biscuits: On a lightly floured surface, pat dough to ½-inch thickness. Using a 2½-inch fluted round cutter, cut desired amount dough; freeze remaining dough.
  3. For strips: On a lightly floured surface, roll dough to ⅛-inch thickness. Cut dough to into strips in desired width; freeze remaining dough.
