Tortellini with Creamy Pasta Sauce
Makes 4 to 6 servings
Ingredients
- 2 cups jarred pasta sauce
- ½ cup heavy whipping cream
- 1 (20-ounce) package refrigerated five-cheese tortellini, cooked according to package directions Side Salad (recipe follows), to serve
- Garnish: torn fresh basil leaves, shaved Parmesan cheese
Instructions
- In a medium enameled cast-iron Dutch oven, bring pasta sauce and cream to a boil over medium heat; reduce heat to low, and let simmer, stirring occasionally, about 2 to 3 minutes.
- Add hot cooked pasta to sauce mixture, stirring gently, until combined and heated through, about 2 to 3 minutes. Garnish with basil and Parmesan, if desired. Serve with Side Salad.
Side Salad
Makes 4 to 6 servings
Ingredients
- 12 cups fresh spring mix lettuces
- ½ cup shaved radish
- 1 cup cherry tomatoes
- ½ cup thinly sliced red onion
- Simple Lemon Vinaigrette (recipe follows)
Instructions
- In a large bowl, toss together lettuces, radish, tomatoes, and onion. Add Simple Lemon Vinaigrette, gently tossing to coat. Serve immediately.
Simple Lemon Vinaigrette
Makes about ¼ cup
Ingredients
- 1 tablespoon fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon honey
- ½ teaspoon kosher salt
- ⅛ teaspoon ground black pepper
- ¼ cup olive oil
- 2 teaspoons chopped fresh thyme
Instructions
- In a small glass bowl, whisk together lemon juice, vinegar, honey, salt, and pepper. Slowly whisk in oil in a slow, steady stream, until well combined. Stir in thyme. Refrigerate and store for up to 7 days.
