This trifecta of crispy sweet potatoes, salty ham, and sweet veggies comes together easily for a quick dinner or brunch Sweet Potato and Country Ham Hash.
Sweet Potato and Country Ham Hash
Makes 4 servings
Ingredients
- 2½ cups (½-inch) cubed peeled sweet potato
- 2 tablespoons olive oil, divided
- 6 ounces country ham, chopped
- 1 cup chopped yellow onion
- 1 cup chopped red bell pepper
- 3 cloves garlic, minced
- 3 cups loosely packed fresh baby spinach
- 1 teaspoon kosher salt
- ¼ teaspoon ground black pepper
- Fried eggs, to serve
Instructions
- In a medium cast-iron Dutch oven, bring sweet potatoes and water to cover to a boil over high heat. Cook for 3 minutes. Drain well.
- In a 12-inch cast-iron skillet, heat 1 tablespoon oil over medium-high heat. Add ham; cook, stirring occasionally, until browned, about 5 minutes. Remove ham from skillet using a slotted spoon, and let drain on paper towels, reserving drippings in skillet.
- Add onion, bell pepper, and garlic to skillet; cook for 2 minutes. Add sweet potato to skillet in a single layer; cook, stirring occasionally, until browned, about 6 minutes. Stir in ham, spinach, salt, and black pepper; cook just until spinach wilts. Serve immediately with fried eggs.
