Ranch Seasoning Mix
Makes about 1½ cups
Ingredients
- 1 cup powdered buttermilk
- 2 tablespoons kosher salt
- 2 tablespoons dried parsley
- 2 tablespoons dried dill
- 2 tablespoons dried chives
- 2 tablespoons kosher salt
- 4 teaspoons dried thyme
- 1 tablespoon ground black pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Instructions
- In a small bowl, combine all ingredients. Store in an airtight container up to 1 month. Stir well before using.
Ranch Chicken
Makes 4 to 5 servings
Ingredients
- 2 tablespoons olive oil
- 1 (3½-pound) whole chicken
- ⅓ cup Ranch Seasoning Mix (see above)
- ¼ cup unsalted butter, melted
- 1 head fresh green leaf lettuce, chopped
- ⅓ cup sliced red onion
- 1 cup fresh parsley leaves
- Ranch Dressing (recipe follows)
Instructions
- Preheat oven to 375°.
- Rub olive oil all over chicken. Rub chicken all over with Ranch Seasoning Mix. Place chicken in a 10-inch cast-iron skillet.
- Bake for 15 minutes. Using a pastry brush, baste chicken with melted butter. Bake, basting with butter every 15 minutes, until golden brown, crispy, and an instant-read thermometer inserted into breast registers 165° and into thigh registers 170°, 30 to 45 minutes more.
- In a large bowl, combine lettuce, onion, and parsley. Drizzle with desired amount of Ranch Dressing and toss to coat. Serve with chicken and remaining Ranch Dressing.

Ranch Dressing
Makes about 1 cup
Ingredients
- ⅓ cup Ranch Seasoning Mix (recipe on page 25)
- ½ cup sour cream
- ½ cup mayonnaise
- 3 tablespoons water
Instructions
- In a medium bowl, whisk together all ingredients until smooth. Cover and refrigerate until ready to use.
