Let the batter stand for 5 to 10 minutes while you heat your cast-iron skillet or griddle pan. This helps the gluten in the flour to relax, creating a tall, fluffy pancake. Using medium heat for the pan is best—too low and the pancakes will not develop a golden brown color; too high and the exterior will burn before they’re ready to be turned.
