Honey-Bourbon Peaches

Makes 4 to 6 servings
Ingredients
  • 4 fresh peaches, halved, pitted, and sliced into ½-inch-thick wedges (about 1¾ pounds)
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup unsalted butter
  • ¼ cup firmly packed light brown sugar
  • 2 tablespoons bourbon
  • 2 tablespoons honey
  • Pound cake and sweetened whipped cream, to serve
  • Garnish: chopped pecans
Instructions
  1. In a medium bowl, combine peaches, lemon juice, salt, cinnamon, and nutmeg.
  2. In a 10-inch skillet, heat butter and brown sugar over medium-high heat, stirring occasionally, until sugar and butter are melted, about 5 minutes. Add peach mixture and cook, stirring occasionally, until softened and lightly caramelized, 5 minutes.
  3. Reduce heat to medium-low. Add bourbon and honey; cook until reduced and coats the back of a spoon, 2 to 3 minutes.
  4. Serve with pound cake and whipped cream. Garnish with pecans, if desired.
