Herb and Cheese Drop Biscuits
Makes 12
Ingredients
- 4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2½ teaspoons kosher salt
- ¼ teaspoon ground black pepper
- Lemon-Garlic Mayo (recipe follows)
- 2½ cups cold whole buttermilk
- 1 (4-ounce) wedge Parmesan cheese, shredded
- ½ cup chopped fresh basil
Instructions
- Preheat oven to 375°. Spray the griddle side of a reversible 19-inch rectangular cast-iron grill/griddle pan with cooking spray.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and pepper. Whisk in Lemon-Garlic Mayo and buttermilk just until combined. Fold in Parmesan and basil. Drop batter by ⅓ cupfuls onto prepared pan.
- Bake until golden brown, 15 to 18 minutes. Let cool in pan for 5 minutes. Serve warm.
Lemon-Garlic Mayo
Makes about ½ cup
Ingredients
- ½ cup mayonnaise
- 1 teaspoon Dijon mustard
- 2 cloves garlic, grated
- ½ teaspoon lemon zest
Instructions
- In a small bowl, whisk together all ingredients. Cover and refrigerate until using.
