Herb and Cheese Drop Biscuits

Herb and Cheese Drop Biscuits
 
Makes 12
Ingredients
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2½ teaspoons kosher salt
  • ¼ teaspoon ground black pepper
  • Lemon-Garlic Mayo (recipe follows)
  • 2½ cups cold whole buttermilk
  • 1 (4-ounce) wedge Parmesan cheese, shredded
  • ½ cup chopped fresh basil
Instructions
  1. Preheat oven to 375°. Spray the griddle side of a reversible 19-inch rectangular cast-iron grill/griddle pan with cooking spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and pepper. Whisk in Lemon-Garlic Mayo and buttermilk just until combined. Fold in Parmesan and basil. Drop batter by ⅓ cupfuls onto prepared pan.
  3. Bake until golden brown, 15 to 18 minutes. Let cool in pan for 5 minutes. Serve warm.

Lemon-Garlic Mayo
 
Makes about ½ cup
Ingredients
  • ½ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, grated
  • ½ teaspoon lemon zest
Instructions
  1. In a small bowl, whisk together all ingredients. Cover and refrigerate until using.
