Grilled Melon and Ham Salad

This easy and fresh Grilled Melon and Ham Salad has everything you could want and more: subtle sweetness from seasonal melon, salty tang from the feta and ham, and a light dressing that won’t overpower it all.

Grilled Melon and Ham Salad
 
Makes 6 to 8 servings
Ingredients
  • 1 pound cantaloupe, seeded and cut into 1-inch-thick slices
  • 1 pound honeydew, seeded and cut into 1-inch-thick slices
  • ½ medium red onion
  • 1 (6-ounce) package country ham
  • 1 (4-ounce) package crumbled feta cheese
  • ½ cup chopped smoked almonds
  • ½ cup fresh parsley leaves
  • ¼ cup Champagne vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1 teaspoon kosher salt
  • ⅛ teaspoon crushed red pepper
  • Garnish: fresh parsley leaves
Instructions
  1. Heat a cast-iron grill pan over medium-high heat.
  2. Working in batches, grill cantaloupe, honeydew, red onion, and ham, turning occasionally, until browned on all sides, 2 to 3 minutes. Transfer to refrigerator until completely chilled.
  3. Cut cantaloupe and honeydew into 1-inch cubes. Thinly slice red onion. Cut ham into thin strips. Transfer melon, onion, and ham to a large bowl. Add feta, almonds, and parsley.
  4. In a small bowl, whisk together vinegar, oil, honey, salt, and red pepper. Drizzle over melon mixture and gently toss to combine. Garnish with parsley, if desired.
