This easy and fresh Grilled Melon and Ham Salad has everything you could want and more: subtle sweetness from seasonal melon, salty tang from the feta and ham, and a light dressing that won’t overpower it all.
Grilled Melon and Ham Salad
Makes 6 to 8 servings
Ingredients
- 1 pound cantaloupe, seeded and cut into 1-inch-thick slices
- 1 pound honeydew, seeded and cut into 1-inch-thick slices
- ½ medium red onion
- 1 (6-ounce) package country ham
- 1 (4-ounce) package crumbled feta cheese
- ½ cup chopped smoked almonds
- ½ cup fresh parsley leaves
- ¼ cup Champagne vinegar
- 2 tablespoons olive oil
- 1 teaspoon honey
- 1 teaspoon kosher salt
- ⅛ teaspoon crushed red pepper
- Garnish: fresh parsley leaves
Instructions
- Heat a cast-iron grill pan over medium-high heat.
- Working in batches, grill cantaloupe, honeydew, red onion, and ham, turning occasionally, until browned on all sides, 2 to 3 minutes. Transfer to refrigerator until completely chilled.
- Cut cantaloupe and honeydew into 1-inch cubes. Thinly slice red onion. Cut ham into thin strips. Transfer melon, onion, and ham to a large bowl. Add feta, almonds, and parsley.
- In a small bowl, whisk together vinegar, oil, honey, salt, and red pepper. Drizzle over melon mixture and gently toss to combine. Garnish with parsley, if desired.
