Chicken Wings with Spicy Mayo Marinade

These crowd-pleasing Chicken Wings with Spicy Mayo Marinade hit all the right notes: spicy, tangy, sweet, and buttery.

Chicken Wings with Spicy Mayo Marinade
 
Makes 4 to 6 servings
Ingredients
  • 5 pounds chicken wings
  • 1 cup mayonnaise
  • ¼ cup honey
  • ½ cup plus 2 tablespoons hot sauce
  • 1 tablespoon lime zest
  • 2 tablespoons fresh lime juice
  • 1 tablespoon kosher salt
  • 2 teaspoons ground black pepper
  • ½ cup unsalted butter
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, grated
Instructions
  1. Cut off and discard wing tips; cut wings in half at joint, if desired. Place in a large resealable plastic bag.
  2. In a small bowl, combine mayonnaise, honey, 2 tablespoons hot sauce, lime zest and juice, salt, and pepper. Pour over wings in bag, tossing to coat. Seal bag and refrigerate for at least 4 hours or up to overnight.
  3. Preheat oven to 400°. Line a large rimmed baking sheet with foil; place wire rack on foil. Remove wings, discarding marinade, and place in a single layer on prepared pan.
  4. Bake until golden brown, 45 to 50 minutes, turning every 10 minutes to prevent burning.
  5. In a medium Dutch oven, heat butter, vinegar, garlic, and remaining ½ cup hot sauce over medium heat, stirring to combine. Drizzle half of butter mixture over wings. Serve immediately with remaining butter mixture.
