Breakfast is Darryl Postelnick’s favorite meal of the day and that love is on full display with this Sweet Potato Breakfast Skillet!
Darryl Postelnick’s Sweet Potato Breakfast Skillet
Makes 2 to 4 servings
Ingredients
- 2 tablespoons plus 1 teaspoon bacon drippings, divided
- 1 pound hot breakfast sausage
- 3 medium sweet potatoes, diced
- 1 white onion, diced
- 1 teaspoon seasoning salt
- 2 large eggs
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 avocado, sliced
Instructions
- Preheat a cast-iron griddle to medium heat. Add 1 tablespoon bacon drippings to the griddle. Add sausage, and cook, breaking up meat with a wooden spoon, until browned. Set aside.
- Add 1 tablespoon bacon drippings to the griddle. Add sweet potatoes and onion, and cook, stirring occasionally, until tender and golden brown, 10 to 15 minutes. Season with seasoning salt, and set aside.
- Add remaining 1 teaspoon bacon drippings to the griddle. Add eggs, sprinkle with salt and pepper, and fry to desired degree of doneness.
- In an oval skillet, place potatoes, sausage, and onion. Top with fried eggs and avocado slices.
