Crispy Cajun-Fried Alligator with Comeback Sauce

Alligator is often enjoyed in regions that specialize in Cajun and Creole cooking, as well as in other areas of the South. When fried, our Crispy Cajun-Fried Alligator with Comeback Sauce flavor and texture is similar to chicken and quite delicious, especially when served with hand-cut fries.

Crispy Cajun-Fried Alligator with Comeback Sauce
 
Makes 4 to 6 servings
Ingredients
  • ½ cup mayonnaise
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced white onion
  • 1 tablespoon plus 2½ teaspoons
  • Cajun seasoning, divided
  • Vegetable oil, for frying
  • 1 cup whole buttermilk
  • 1 large egg
  • 1 tablespoon hot sauce
  • 2 cups all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound alligator, cut into
  • 1-inch cubes
  • French fries and lemon wedges, to serve
  • Garnish: chopped fresh parsley
Instructions
  1. In a small bowl, combine mayonnaise, mustard, ketchup, Worcestershire, minced onion, and ½ teaspoon Cajun seasoning.
  2. In a medium Dutch oven, pour oil to a depth of 2 inches. Heat oil over medium heat until a deep-fry thermometer registers 350°.
  3. In a medium bowl, whisk together buttermilk, egg, and hot sauce. In another bowl, whisk together flour, garlic powder, onion powder, and 1 tablespoon Cajun seasoning. Add alligator to buttermilk mixture.
  4. Working in batches, remove alligator from buttermilk mixture, letting excess drip off. Dredge in flour mixture, shaking off excess. Carefully drop into hot oil, and fry, turning occasionally, until golden brown and crispy, 2 to 3 minutes. Use a slotted spoon to remove alligator and let drain on paper towels. Sprinkle with remaining 2 teaspoons Cajun seasoning. Serve with mayonnaise mixture, French fries, and lemon. Garnish with parsley, if desired.
