Brownie Mix & Fudge Brownies

Swap out the store-bought for this homemade Brownie Mix that can keep for up to three months. That way, Fudge Brownies are just a few ingredients away whenever your sweet tooth strikes!

Brownie Mix
 
Makes about 7 cups
Ingredients
  • 4 cups sugar
  • 2 cups all-purpose flour
  • 1⅓ cups Dutch process cocoa powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon kosher salt
Instructions
  1. In a large bowl, combine all ingredients. Store in an airtight container for up to 3 months. Stir well before using.

Fudge Brownies
 
Makes about 12 servings
Ingredients
  • 2⅓ cups Brownie Mix (see above)
  • ½ cup unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • ¼ cup chopped toasted pecans
  • Fudge Frosting (recipe follows)
  • Garnish: chopped toasted pecans
Instructions
  1. Preheat oven to 325°. Spray a 10-inch cast-iron skillet with cooking spray.
  2. In a large bowl, combine Brownie Mix, melted butter, eggs, vanilla, and pecans, stirring just until smooth. Pour batter into prepared pan and smooth to edges with a spatula.
  3. Bake until a wooden pick inserted in center comes out clean, about 40 to 45 minutes.
  4. Pour Fudge Frosting over top. Garnish with pecans, if desired. Refrigerate until frosting is set, about 30 minutes.

Fudge Frosting
 
Makes about 1½ cups
Ingredients
  • 6 tablespoons heavy whipping cream
  • 6 tablespoons unsalted butter
  • 6 tablespoons Dutch process cocoa powder
  • 2 tablespoons espresso powder
  • 1½ tablespoons light corn syrup
  • ¼ teaspoon kosher salt
  • 2½ cups plus ⅓ cup confectioners’ sugar
  • ½ teaspoon vanilla extract
Instructions
  1. In a medium saucepan, combine cream, butter, cocoa, espresso powder, corn syrup, and salt. Bring to a boil over medium heat, and cook until slightly thickened, 1 to 2 minutes. Gradually whisk in confectioners’ sugar until melted and mixture is smooth and glossy, 2 to 3 minutes. Remove from heat. Stir in vanilla. Use immediately.
Notes
KITCHEN TIP
If you have a kitchen thermometer, you can shoot for a doneness temperature between 180° and 190° for fudgy brownies.
