Consider making a double batch of this sweet and spicy batch of Candied Mixed Nuts because they’re so addictive you’ll probably have to keep a stash for yourself.
Candied Mixed Nuts
Makes about 6 cups
Ingredients
- 2 large egg whites
- 1 cup firmly packed light brown sugar
- 3 teaspoons finely chopped fresh rosemary, divided
- 2 teaspoons chili powder
- 1 teaspoon ground chipotle chile pepper
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
- ¼ teaspoon ground red pepper
- 2 (15-ounce) cans salted mixed nuts
Instructions
- Preheat oven to 300°. Spray a 12-inch cast-iron skillet with cooking spray.
- In a large bowl, whisk egg whites until foamy; whisk in sugar, 1½ teaspoons rosemary, chili powder, chipotle chile pepper, salt, black pepper, and red pepper until well combined. Stir in nuts until well coated.
- Spread nuts into prepared skillet.
- Bake until nuts are golden brown and fragrant, about 25 minutes, stirring every 10 minutes.
- Transfer nuts to a piece of parchment or wax paper, and sprinkle with remaining 1½ teaspoons rosemary. Let cool completely. Store in an airtight container for up to 2 weeks.
