¼ cup Loveless Cafe Applewood Smoked Country Bacon, cooked and chopped
1 tablespoon salt
½ cup chicken stock
3 tablespoons balsamic vinegar, divided
Instructions
Fill a medium stockpot about three-quarters full with water, and bring to a boil over medium-high heat. Add Brussels sprouts to boiling water and blanch for 1 to 2 minutes. (Be careful not to overcook.) Drain Brussels sprouts.
In a 10-inch cast-iron skillet, melt butter over medium heat. Add Brussels sprouts; cook, stirring occasionally, until golden brown, about 6 to 8 minutes. Add bacon and salt; cook for 2 minutes.
