Fudge Frosting
- 6 tablespoons heavy whipping cream
- 6 tablespoons unsalted butter
- 6 tablespoons Dutch process cocoa powder
- 2 tablespoons espresso powder
- 1½ tablespoons light corn syrup
- ¼ teaspoon kosher salt
- 2½ cups plus ⅓ cup confectioners’ sugar
- ½ teaspoon vanilla extract
- In a medium saucepan, combine cream, butter, cocoa, espresso powder, corn syrup, and salt. Bring to a boil over medium heat, and cook until slightly thickened, 1 to 2 minutes. Gradually whisk in confectioners’ sugar until melted and mixture is smooth and glossy, 2 to 3 minutes. Remove from heat. Stir in vanilla. Use immediately.
KITCHEN TIP
If you have a kitchen thermometer, you can shoot for a doneness temperature between 180° and 190° for fudgy brownies.
