Fudge Brownies
- 2⅓ cups Brownie Mix (see above)
- ½ cup unsalted butter, melted
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- ¼ cup chopped toasted pecans
- Fudge Frosting (recipe follows)
- Garnish: chopped toasted pecans
- Preheat oven to 325°. Spray a 10-inch cast-iron skillet with cooking spray.
- In a large bowl, combine Brownie Mix, melted butter, eggs, vanilla, and pecans, stirring just until smooth. Pour batter into prepared pan and smooth to edges with a spatula.
- Bake until a wooden pick inserted in center comes out clean, about 40 to 45 minutes.
- Pour Fudge Frosting over top. Garnish with pecans, if desired. Refrigerate until frosting is set, about 30 minutes.
