Candied Mixed Nuts
 
 
Makes about 6 cups
Ingredients
  • 2 large egg whites
  • 1 cup firmly packed light brown sugar
  • 3 teaspoons finely chopped fresh rosemary, divided
  • 2 teaspoons chili powder
  • 1 teaspoon ground chipotle chile pepper
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon ground red pepper
  • 2 (15-ounce) cans salted mixed nuts
Instructions
  1. Preheat oven to 300°. Spray a 12-inch cast-iron skillet with cooking spray.
  2. In a large bowl, whisk egg whites until foamy; whisk in sugar, 1½ teaspoons rosemary, chili powder, chipotle chile pepper, salt, black pepper, and red pepper until well combined. Stir in nuts until well coated.
  3. Spread nuts into prepared skillet.
  4. Bake until nuts are golden brown and fragrant, about 25 minutes, stirring every 10 minutes.
  5. Transfer nuts to a piece of parchment or wax paper, and sprinkle with remaining 1½ teaspoons rosemary. Let cool completely. Store in an airtight container for up to 2 weeks.
