Lobster Stock
- 4 cups water
- 2 tablespoons lobster base
- 1½ teaspoons grated fresh ginger
- ½ teaspoon coriander seed, crushed
- 1 clove garlic, grated
- 1 star anise
- In a large enameled cast-iron Dutch oven, bring all ingredients to a boil over medium-high heat. Reduce heat, and simmer for 30 minutes. Strain, discarding solids.
